Beneath every bract sits the lupulin gland, the golden reactor packed with resins, essential oils, alpha and beta acids that give beer its bitterness, aroma, and soul. We built this whole place around what's happening in there.
Humulone
The primary bittering compound. Isomerizes in the boil to deliver the clean, resinous bite that anchors a proper IPA.
Cohumulone
Humulone's sharper sibling. Higher levels lean toward a coarser bitterness, and the reason variety selection matters on every tap.
Lupulone
The beta-acid backbone. Contributes stability and the deep aromatic undertones that age gracefully in the cellar.
